Our brewery is a combination of vintage and new equipment. It supports a 600 liter brew-length Brewhouse from Canadian company DME that first resided on Ponsonby Rd before moving to Australia. We have brought it home and surrounded it with 1200 liter fermentation and serving tanks that allow us to have 15,000 liters of 12 different beer styles onsite at any given time.
We support our "experimental attitude" with a 50 liter Farro brewing system out of Dunedin that is supported by 3 conical fermenters. This is where our creativity goes to play. These are single run beers intended to elicit feedback from our guests to provide us with direction for future beers.
Our beers are all batch brewed from natural ingredients. No additives, preservatives or extracts are used. We start with malted barley that we mill on site for freshness, water that we purify and then "mineralise" with brewing salts to mimic the water of the origin of the beer style, and hops and yeast.
We serve directly from the tanks behind the bar. Our brewery is situated in an open space in the back of the building, viewable by all guests. We invite you to ask about a brief tour.
